baked potato stuffed with chicken and lentils with a broccoli sauce. *food processor is needed*

Recipe Ingredients for broccoli stuffed potato

0.45 stalk, large (11"-12" long) Broccoli, Cooked
0.75 serving Baked Potato Small Plain
0.5 cup Lentils, Mature Seeds
1/2 breast, bone and skin removed Chicken, Breast, Meat Only
1 slice (1 oz) Low Fat, Cheddar Or Colby Cheese

Recipe Directions for broccoli stuffed potato

  1. bake potato in oven for about 1/2 hour on 400.

  2. (prep with Small amount of oil salt and pepper. piercing the skin)

  3. poach chicken breast in water for 20 minutes. shred when cooked.

  4. boil broccoli until water turns green.

  5. strain. keeping the water (you will need it in a second)

  6. put cooked broccoli in food processor and pulse. slowly adding the saved broccoli water until it becomes a paste.

  7. put in a med sauce pan, adding rinsed lentils and chicken.

  8. cook until proper temperature.

  9. hollow out baked potato. leaving skin and a little insides.

  10. add broccoli mix to potato. shed cheese over it.

  11. and voila!

  12. surprisingly good.

  13. (hint: if broccoli mix is too watery, add some wheat germ to thicken the sauce.)
