Delicious appetizer over arugula tossed in your favorite vinegar or a double duty whole gran and veggie side dish! Yum!

Recipe Ingredients for Broccoli and Spinach Croquettes

0.75 cup Frozen Cut Leaf Spinach
1.5 cup Broccoli
45 g dry Couscous
1/4 cup 6 Cheese Italian Shredded Cheese
1 large Egg, Whole
1/4 cup Bread Crumbs
1 serving Extra Virgin Olive Oil

Recipe Directions for Broccoli and Spinach Croquettes

  1. Heat broccoli and spinach in microwave prrof bowl for 3 minutes until heated through.

  2. Chop in food processor until finely chopped.

  3. Mix with cooked cous cous and season with a pinch of salt and a few turns of fresh ground pepper.

  4. Heat olive oil over med-high heat.

  5. Cook for two minutes on each side until golden brown then transfer to 350 degree oven for 10 minutes until heated through.
