By Victoria333 A variation on my asparagus soup served cool or warm for summer or winter months.

Recipe Ingredients for Broccoli Soup, Victoria's Without Cream

4 bunches Broccoli
1 1/2 medium Onion
4 cloves Garlic
2 stalks Celery
1 cup Chicken Broth or Vegetable Broth
1 tablespoon olive oil
1 Salt to taste
1 Pepper to taste

Recipe Directions for Broccoli Soup, Victoria's Without Cream

  1. Wash broccoli thoroughly. Mince onions, celery and garlic.

  2. Sauté broccoli in +-1/2 cup water until al dente (reserving 8 floret tips for garnish). Save the water for the soup.

  3. Sauté onions, celery and garlic in olive oil and when almost finished add +-1 cup stock; continue to cook until onions are clear.

  4. Puree in blender broccoli, with a little stock or broccoli water. Add all the other ingredients (reserve a few broccoli florets), including salt and pepper to taste, and blend on high for several minutes. Dish and place a few broccoli florets for garnish.

  5. As a side dish around the soup; roll mint leaves around cherry tomatoes and goat cheese or feta spread on mint leaf.
