Recipe Ingredients for broccoli soup (vegan)

8 g olive oil
1 large onion
500 g broccoli
4 cloves garlic
259 g cauliflower
163 g carrot
6 cups water
10 g Bouillon Powder, Swiss Vegetable

Recipe Directions for broccoli soup (vegan)

  1. Fry onion and garlic off in the olive oil

  2. Add carrot and cauliflower and continue to cook for a couple of minutes.

  3. Add the water (hot) and the stock powder

  4. Simmer for 10 minutes, then add the broccoli florets and simmer for a further 10 minutes, or until broccoli is just tender.

  5. Blend and serve
