Recipe Ingredients for Broccoli Soup with Sauted Prawns

1 pint of chicken stock
4 ozs. of broccoli
2 ozs. of carrot
2 ozs. of leek
1 pinch of garlic powder
1 pinch of black pepper
1 oz. of prawns

Recipe Directions for Broccoli Soup with Sauted Prawns

  1. In a large saucepan, bring the chicken stock to the boil. Chop the vegetables and add to the stock along with the garlic powder and pepper. Cook for 3 minutes or until the broccoli is bright green and tender to the fork. Remove from the heat and let it cool slightly.

  2. Ladle a portion of the mixture into a blender and pulse until it becomes a creamy consistency. Pour the blended soup into another saucepan and repeat this process until all the mixture has been blended. Reheat the soup.

  3. Heat 1 spray of cooking spray in a non-stick pan. Add the prawns and season with pepper. Cook for about two minutes. Ladle the soup into bowls and garnish with the prawns.
