Broccoli soup thickened with sweet potato

Recipe Ingredients for Broccoli soup

2 tablespoon olive oil
1 medium onion
1 sweet potato
5 cups broccoli
2 cups vegetable broth
1 tsp salt

Recipe Directions for Broccoli soup

  1. Heat oil in large saucepan over medium-high heat. Add onion; saute until golden, about 5 minutes.

  2. Add broth, sweet potato, salt and pepper to taste to saucepan; bring to boil. Reduce heat to simmer; cover and cook until potato is fork tender, about 15 minutes.

  3. Add broccoli and continue to cook until broccoli is tender about 10 minutes

  4. Ladle broccoli mixture into blender. Blend until very smooth. Return soup to saucepan; cook over low heat until warmed through. If soup is too thick, stir in additional additional broth to thin consistency. Adjust seasonings.
