This is an amazingly simple, easy and tasty broccli soup. Stolen from Gordon Ramsey here: http://www.dump.com/2010/11/17/how-to-make-yummy-broccoli-soup-by-gordon-ramsay-video/ I like to throw in a garlic clove or two and quadruple the size. And save the left over water as a veggie broth for other soups.

Recipe Ingredients for Broccoli Soup

2 cups of broccoli
4 cups of water
1 salt to taste

Recipe Directions for Broccoli Soup

  1. Bring water to a rapid boil in a pot.

  2. Pre-season with salt.

  3. Add broccoli heads to water, add some more salt on top and cover pot with lid.

  4. Let boil for 4-5 minutes.

  5. Strain broccoli, saving water in a large bowl.

  6. Add broccoli to a blender.

  7. Add saved water to broccoli in blender, filling water to 3/4 the height of broccoli.

  8. Blend to smooth.

  9. Add salt to taste.
