A mild, comforting soup with just a touch of zest: it's a perfect side for grilled steak or chicken. Servings are 1/2-cup side-dish size.

Recipe Ingredients for Broccoli Soup

3 cups milk
2 tbl cornstarch
1 tbl butter
1 tsp salt
1/8 tsp celery seed
1/4 tsp thyme
1/8 tsp cayenne pepper
1 tbl parsley, finely chopped
2 cups chopped frozen broccoli
1 tbl shredded cheddar cheese

Recipe Directions for Broccoli Soup

  1. Whisk together all ingredients except parsley, broccoli, and cheese. Cook over medium heat, stirring constantly, until soup boils. Cook another 2 minutes, still stirring.

  2. Add broccoli and parsley. Cook over very low heat until broccoli is tender and heated through, about 2 - 5 more minutes. Remove from heat and stir in the cheese until melted.
