Low-Fat, Vegan Broccoli Soup Recipe

Recipe Ingredients for Broccoli Soup

2 tbsp Margarine
2 Leeks
2 tbsp Flour
4 cups Water
2 Vegetable Bouillon Cubes
1 1/2 pounds Broccoli
1/2 cup skim milk

Recipe Directions for Broccoli Soup

  1. Heat the margarine, add the leeks, cover and simmer until tender.

  2. Sprinkle the flour & stir briefly

  3. Add the water & bouillon cube, bring to a boil, reduce heat and simmer, 5 minutes

  4. Add the chopped up broccoli, bring to a boil, reduce heat and simmer 10 minutes.

  5. Remove from heat & blend in batches until smooth.

  6. Return to pot, add milk and season to taste
