Deliciously healthy broccoli soup

Recipe Ingredients for Broccoli Soup

8 cups chopped broccoli
1 medium onion, chopped
1 cup chopped celery
1 1/2 tablespoons olive oil
4 cups chicken broth
4 cups milk
4 tablespoon cornstarch
1 teaspoon salt
1 pepper to taste
1 teaspoon thyme

Recipe Directions for Broccoli Soup

  1. Chop up onion and put in pot with olive oil. Simmer on low heat. Add water as needed

  2. Chop celery, add to onion and olive oil.

  3. Chop broccoli, add to pot. Let saute for a while.

  4. Add chicken broth and bring to a boil. Let boil for about 10 minutes.

  5. Mix milk, cornstarch, salt, pepper, and thyme. Add to pot.

  6. Let cook until mixture is thickened.

  7. You may add cheese as well.
