Broccoli Soup Recipe

A relatively low calorie soup with recipe i adapted from another website. You can add some herbs to further enhance the taste.

Recipe Ingredients for Broccoli Soup

100 g Broccoli Chopped
40 g Onion Chopped
1 clove of Garlic Chopped
450 ml Low Sodium Chicken Broth
300 ml Low Fat Fresh Milk
11 g / 0.8tbsp Low Fat Sour Cream
1/4 tsp salt to taste
1 tsp cornstarch

Recipe Directions for Broccoli Soup

  1. Mix chopped onions, broccoli and garlic with chicken broth in a small pot. Bring mixture to simmer for 10-15min until vegetables have soften.

  2. Puree the broth mixture and pour the mixture back into the pot. And bring to simmer.

  3. Mix sour cream with a bit of milk to a smooth texture.

  4. Mix cornstarch with a bit of mix to a smooth texture.

  5. Add sour cream mixture, the remaining milk then the cornstarch mixture slowly into pureed broth mixture.

  6. Bring soup to boil, then let it simmer for 2 minutes.

  7. Serve or bag to chill for future use.
