My take on Gordon Ramsay's simple broccoli soup.

Recipe Ingredients for Broccoli Soup with Feta & Smoked Almonds

2 1/2 cup, chopped Broccoli
1 Table Salt
2 oz Feta Cheese, Fat Free
1/2 oz Smoked Almonds

Recipe Directions for Broccoli Soup with Feta & Smoked Almonds

  1. Bring 2 quarts of water to a boil with 2 tablespoons of salt.

  2. Add broccolli florets only (not stems, they are stringy)

  3. Boil until broccoli can be pierced easily with a fork (not mushy though)

  4. DO NOT DRAIN WATER

  5. Use a slotted spoon to remove broccoli from water and place in blender or food processor

  6. Add 1.5 cups of the broccoli water from the pot into the blender or food processor

  7. Pulse a couple times to break up broccoli

  8. Blend on high for about a minute until nice and smooth

  9. Pour into a low bowl for more surface area.

  10. Sprinkle smoked almonds and feta cheese all over surface.

  11. Enjoy, enjoy, enjoy!!
