Broccoli Souffle - Reduced calorie version

Recipe Ingredients for Broccoli Souffle - Reduced calorie version

32 oz Frozen Broccoli Cuts
8 1/2 oz 98% Fat Free Campbell's Cream of Mushroom Soup
1 cup Hellman's Lite Mayonnaise
2 eggs
8 oz (2 cups) shredded 2% sharp cheddar cheese
2 sprays Pam
1 cup seasoned bread crumbs

Recipe Directions for Broccoli Souffle - Reduced calorie version

  1. Boil or microwave Broccoli cuts until crisp-tender.

  2. Combine in large bowl and mix well with spatula:

  3. Cream of Mushroom Soup

  4. Mayonnaise

  5. 2 beaten egg yokes - separate and save whites in small mixing bowl

  6. 1.5 tsp dried onion flakes

  7. Shredded sharp cheddar cheese

  8. Fold in broccoli cuts and mix gently

  9. Beat saved egg whites into stiff peaks. Fold gently into mixture

  10. Pour into 13 x 9 casserole dish sprayed with Pam

  11. Sprinkle top with seasoned bread crumbs

  12. Bake in 350 degree oven for 30-40 minutes until Souffle is bubbly and bread crumbs are browned.

  13. Can be made ahead and refrigerated but add about 10-15 minutes cooking time.
