Recipe Ingredients for Broccoli-Shrimp Scampi from Family Circle Magazine

4 cup broccoli florets
3 tbsp oil, olive, light
1 lb rotini pasta
2 tbs smart balance buttery spread, light
4 tbsp lemon juice
1/4 tsp garlic salt
4 cloves garlic, minced
1 1/2 lb uncooked shrimp
1/2 tsp salt
1/8 tsp black pepper
3 tbsp seasoned bread crumbs

Recipe Directions for Broccoli-Shrimp Scampi from Family Circle Magazine

  1. In pot of boiling, lightly salted water, add broccoli and cook for 3 minutes.

  2. Scoop broccoli from water and transfer to 12 inch skillet with oil.

  3. Bring same pot of water to boil and add pasta and cook according to pkg directions. Drain and transfer to serving bowl. Toss with butter and 2 tbsp of the lemon juice and garlic salt.

  4. Meanwhile heat broccoli and oil over medium high heat until sizzling. Add garlic and shrimp. Cook until shrimp is pink. Add remaining 2 tbsp lemon juice, salt and pepper.

  5. Stir in bread crumbs and serve over the rotini.
