A cold, gelled savory salad served on fresh lettuce leaves.

Recipe Ingredients for Broccoli Salad

20 oz frozen broccoli
20 oz fat-free chicken broth
1 1/2 c lowfat mayo
2 1/2 g (1/2 t) worchestershire sauce
1/4 c onion, finely chopped
14 g (2 packs) unflavored gelatin
1/2 c water
1/4 c lemon juice
8 hard boiled eggs, chopped

Recipe Directions for Broccoli Salad

Cook broccoli, chop and cool. Soften gelatin in water. Heat broth, add gelatin and stir until dissolved. Cool. Gradually add broth to mayo. Stir in lemon juice and worchestershire sauce. Chill mixture until it is the consistency of unbeaten egg whites. Fold in broccoli, eggs, and onion. Put in mold and chill several hours or overnight.
