A healthy version of broccoli salad

Recipe Ingredients for Broccoli Salad

3 cups broccoli, chopped
1/4 red onion, chopped
1 cup radicchio, chopped
1 carrot, grated
1/4 cup parsley, chopped
1/2 cup unsalted cashews, chopped
2 tablespoons dried cranberries
2 tablespoons fresh lemon juice
1/2 cup balsamic vinegar
1/4 cup extra virgin olive oil

Recipe Directions for Broccoli Salad

  1. Mix all ingredients, using just enough of the oil/vinegar mix to moisten.

  2. Let it sit in the fridge overnight, allowing the dressing to soften the veggies.
