great summer salad, easy to prepare... best if refrigerated overnight to let flavors come together

Recipe Ingredients for Broccoli Salad

6 cups fresh broccoli
1 red onion
1/2 pound bacon
1/4 cup dried mango
1/4 cup sliced almonds
3/4 cup reduced fat cheddar cheese
1 cup miracle whip light
1/2 cup Splenda
2 tablespoons red wine vinegar

Recipe Directions for Broccoli Salad

  1. DIRECTIONS

  2. Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.

  3. Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, mango, cheese and almonds

  4. To prepare the dressing, mix the miracle whip light, splenda and vinegar together until smooth. Stir into the salad, let chill and serve.
