Recipe Ingredients for Broccoli Roulade

6 tbsp Smart Balance Buttery Spread
3/4 cup flour
3/4 tsp salt
3 1/2 cups skim milk
1 1/2 cups shredded Swiss cheese
6 eggs
1 pound fresh broccoli
1/4 tsp dry mustard

Recipe Directions for Broccoli Roulade

  1. Grease a 15x10x1 inch jelly-roll pan; line with foil; grease foil.

  2. Melt margarine, blend in flour & salt.

  3. Slowly add 3 cups of the milk, stirring constantly untill sauce thickens & bubbles; remove from heat;pour 1 cup into a small sauce pan and reserve.

  4. Add 1/2 cup of the cheese to the larger amount of sauce, stirring until the cheese melts.

  5. Beat egg whites in a small bowl until peaks form. Beat egg younds in a larger bowl with the same beaters until light and thick, 3 minutes.

  6. Beat a small amount of the hot sauce into the uyolks; then slowly stir in the remainder untill well blended.

  7. Stir a spoonful of the egg whites into the sauce, then fold in remaining egg whites until no streaks of white remain. Spread souffle mixture evening in prepared pan.

  8. Bake in a moderate oven (325) for 45 minutes or until top is golden and springs back when lightly touched.

  9. Bake at 325 for 45 minutes.
