Recipe Ingredients for Broccoli Rotini

16 oz broccoli, fresh, choppped
16 oz pasta, rotini
2 tbsp garlic, minced
1/2 cup olive oil
1/2 cup parmesan cheese, grated
1 pinch salt
1 dash pepper

Recipe Directions for Broccoli Rotini

  1. Cook broccoli in a large pot of boiling water until tender. First 7 minutes of boiling leave uncovered to retain color, then cover to finish cooking.

  2. Drain broccoli but retain water.

  3. Reuse broccoli water to cook pasta until al dente according to package instructions.

  4. Drain pasta.

  5. Saute garlic in the olive oil in a very large pot. Before it browns, add the cooked pasta, broccoli, grated Parmesan cheese and toss. Add salt and pepper to taste.

  6. Serve warm.
