Recipe Ingredients for Broccoli rice stir fry

1 1/2 cups uncooked brown rice
1 1/2 tablespoon extra virgin olive oil
16 ounce broccoli florets
3 green onions
2 small eggs
2 tablespoons low sodium soy sauce
1 pinch kosher salt
1 pinch black pepper
1 pinch crushed red pepper
1 1/2 tablespoon hoisin sauce
1 1/2 tbsp chili paste

Recipe Directions for Broccoli rice stir fry

  1. In a saucepan, bring 3 cups water to a boil. Stir in rice. Reduce heat, cover, and simmer for 20 minutes.

  2. Heat oil in a large skillet over medium heat. Saute broccoli until tender crisp, and add garlic and scallions. Remove from skillet. Scramble eggs; return broccoli mixture to pan. Stir in cooked rice, soy sauce, hoisin sauce, chili paste, salt and pepper.
