A wheat-free version of a popular kugel

Recipe Ingredients for Broccoli-rice kugel

16 oz frozen thawed chopped broccoli
1/2 large chopped onion
1/2 c egg beaters
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
6 tbsp uncooked instant brown rice

Recipe Directions for Broccoli-rice kugel

  1. Place broccoli, onion, egg beaters, olive oil, salt and pepper in food processor.

  2. Process until smooth.

  3. Stir in rice.

  4. Place in 7x9 pan sprayed with non-stick spray.

  5. Bake for about 1 1/4 hours at 350 degrees.
