Broccoli & Rice Casserole with Lentil & Flaxseed

Recipe Ingredients for Broccoli & Rice Casserole with Lentil & Flaxseed

875 ml water
92 g lentils, uncooked
104 g tomatoes
1 g salt
315 g rice, uncooked
355 g broccoli, steamed
4 eggs, raw
45 g flaxseed

Recipe Directions for Broccoli & Rice Casserole with Lentil & Flaxseed

  1. Cook lentils with chopped onions and tomatoes & 250ml water, bring to boil, cover, reduce and let simmer 20 minutes

  2. Meanwhile, cook rice according to directions

  3. Steam or blanch broccoli

  4. After all ingredients are cooked, allow to cool enough to handle.

  5. Add Flaxseed and mix in a large bowl

  6. Beat 4 eggs with 100ml water and pour over rice & broccoli mixture.

  7. Bake in a casserole for 45 minutes at 350.

  8. Allow to cool 5 minutes before serving.
