Recipe Ingredients for Broccoli and Red Pepper Pasta

1 pound pasta, Fusili
14 oz. artichoke hearts, divided
1 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1 garlic clove, minced
1/2 cup coconut milk
1 tbsp feta cheese
8 cups broccoli
2 red peppers
2 cups fresh spinach, chopped
1 large tomato, chopped

Recipe Directions for Broccoli and Red Pepper Pasta

  1. Bring water to boil in pot; add pasta and cook according to directions. Drain.

  2. Combine 2 artichoke hearts and juice, olive oil, and next 7 ingredients in a blender or food processor; process until smooth. Set aside

  3. Chop remaining artichoke hearts.

  4. Wash, dry, and chop broccoli and red pepper into bite-sized pieces (tossing woodiest parts of broccoli stems).

  5. Warm 1-2 tablespoons of olive oil in a nonstick skillet and sauté broccoli and peppers until crunchy-tender.

  6. Add cooked pasta, spinach, tomato, blended sauce and artichoke hearts to the skillet with the cooked vegetables; toss well.
