nice, simple omlette. ideal for a quick ish lunch

Recipe Ingredients for Broccoli and Red pepper omlette

2 medium eggs
1/2 red bell pepper
1/2 stalk broccoli
1/2 slice of sliced cheddar
1/2 cup lettuce cos or romaine

Recipe Directions for Broccoli and Red pepper omlette

  1. a little olive oil in a heated frying pan.

  2. chop up broccoli and bell peppers, fry till lightly cooked

  3. mix eggs and cheese(broken into pieces) in a bowl.

  4. take out veg, set aside on plate.

  5. fry egg and cheese mixture in pan till cooked

  6. place broccoli and peppers in centre of omlette, fold.

  7. serve with portion of lettuce, cos or romaine
