3 teaspoons olive oil 1/2 small onion, chopped salt and pepper 1 cup Quinoa, rinsed well 2 cups chopped broccoli 1/4 cup raisins 1/2 cup roasted almonds, chopped 2 scallions

3 1tsp Olive Oil
1/2 cup, chopped or diced Onions
1 cup Quinoa
2 cup Broccoli
0.25 cup (not packed) Raisins, Seedless
0.5 cup whole kernels Almonds, Dry Roasted
0.882 oz Scallions

Recipe Directions for Broccoli-Quinoa Pilaf

Heat 1 teaspoon of oil. Add onions and season with salt and pepper. Cook 3-4 mins. Add Quinoa and 1 1/2 cups of water to sausepan and bring to boil; reduce heat to low, cover, simmer for about10-12 mins. Fold in broccoli and raisins into quinoa, cover, and cook until both are tender about 8-10 mins. Romove from heat fold in almonds, scallions, and salt and pepper for taste.
