Recipe Ingredients for BROCCOLI PRIMAVERA

2 cups chicken broth
3 c. broccoli, chopped
4 green onions, chopped
2 oz red bell pepper, finely chopped
1 oz fresh spinach leaves, finely chopped
1/2 red onion, cut in wedges
1 clove garlic, minced
2 tsp. dried basil leaves
1 tsp oregano
1/8 tsp. ground nutmeg
3 tbsp. cornstarch
1 cup milk
8 oz spaghetti, whole wheat
3 tbsp. grated Parmesan cheese

Recipe Directions for BROCCOLI PRIMAVERA

In large skillet or Dutch oven bring chicken broth to boil over high heat. Add broccoli, peppers, spinach, onion, garlic, basil and nutmeg. Cook uncovered, stirring occasionally, 5 minutes or until broccoli is tender crisp. Stir together cornstarch and milk until smooth. Stir into broccoli mixture, stirring constantly, bringing to boil over medium heat and boil 1 minute. Spoon over hot spaghetti. Sprinkle with cheese. Makes 4 servings.
