Broccoli-Potato Strata from Vegetarian Times

Recipe Ingredients for Broccoli-Potato Strata

1 large sweet potato
2 tbsp unsweetened soy milk
1 pinch nutmeg
5 cups chopped broccoli
1/2 cup fat free ricotta cheese
1 egg
1 cup chopped spinach
3 tbsp parmesan cheese
3 tbsp plain breadcrumbs

Recipe Directions for Broccoli-Potato Strata

  1. Preheat oven to 375F. Coat 8x8 glass baking dish with cooking spray. Pierce sweet potatoes with fork, wrap in plastic wrap. Cook in microwave on high power 10-12 minutes, or until soft. Halve and scoop into bowl. Add milk and nutmeg and season with salt and pepper.

  2. Place broccoli in glass bowl in, cover with plastic wrap and microwave 3 minutes or until tender.

  3. Beat together ricotta and egg until smooth and creamy. Add spinach and 1 tsp parmesan to egg mixture and season with salt and pepper.

  4. Spoon egg mixture into bottom of pan. Next, layer breadcrumbs, followed by sweet potato mixture followed by broccoli. Top with remaining parmesan. Bake 20 minutes. Cool 10 minutes.
