Recipe Ingredients for Broccoli Potato Soup

2 lbs. broccoli florets
16 oz. russet potatoes, peeled and sliced
1 lg. onion, peeled and sliced
3 tbsp. butter
1 tbsp. salt
1/4 tsp. black pepper
1/4 tsp. dried tarragon

Recipe Directions for Broccoli Potato Soup

  1. Place vegetables in pot and add enough water to reach about 1" below vegetables. Cover and bring to boil. Add butter and spices. Lower heat and simmer until vegetables are tender.

  2. Cream with emersion blender until all solids are creamed.
