Vegan Broccoli and Potato Soup with herbs.

Recipe Ingredients for Broccoli and Potato Herbed Soup

1 stalk, small (5" long) Broccoli
3 cup Broccoli
3 cup potatoes
1/2 cup basil
1/2 cup parsley
1 onion
6 cloves garlic
1/2 cup soymilk
1 tsp olive oil
1 tsp salt
1 tsp pepper
4 cup Vegetable Stock
2 cup Cabbage, Chinese (Pe-tsai)

Recipe Directions for Broccoli and Potato Herbed Soup

  1. Saute one onion and 6 cloves of garlic.

  2. Add stock and diced potatoes, simmer for 5 minutes, then add diced broccolli, cook for another 5 minutes.

  3. Blend with 1/2 cup parsley and 1/2 cup of basil.

  4. Stir in some soy milk (or sour cream if you're non vegan) and serve with crispy croutons. ^.^
