Great for freezing! A nice replacement for that tempting breakfast burrito.

Recipe Ingredients for Broccoli-Potato Breakfast "Muffins"

2 cups broccoli
3 cups boiled potato
1/2 cup onion
2 T olive oil
2 cups egg whites
4 strips bacon
5 T parmesan cheese
1/2 t Thyme, fresh
1/4 t Garlic powder
1/2 t salt
1/4 t pepper

Recipe Directions for Broccoli-Potato Breakfast "Muffins"

  1. Preheat oven to 375 degrees.

  2. Steam broccoli until tender (approximate 8-10 minutes at a boil). Drain and chop.

  3. Boil potatoes for 20 minutes with thyme and a sprinkle of garlic powder. Drain, allow to cool. Chop.

  4. In a heavy skillet, add olive oil to a medium hot pan, saute onion for 1-2 minutes, then add potatoes and broccoli. Allow to brown (like hashed browns).

  5. Seasons with salt and pepper.

  6. Spray regular sized cupcake tin with cooking spray.

  7. Fill each muffin cup loosely with the potato-broccoli mixture.

  8. Pour eggs whites into each cup and fill to almost the brim.

  9. Sprinkle with parmesan cheese and a pinch of bacon bits.

  10. Bake for 30-40 minutes, until a butter knife inserted into center comes out clean (no uncooked egg whites).
