can use shallots instead of onion

Recipe Ingredients for Broccoli pilaf

2 tbsp olive oil
1/4 cup onion, chopped
1 cup brown rice
1/2 cup quinoa
3 cups broth
1/2 lb broccoli
1/4 cup walnuts, chopped
1/4 cup parmesan
1 tbsp parsley

Recipe Directions for Broccoli pilaf

  1. heat oilive oil

  2. saute onions

  3. stir in rice and quinoa

  4. saute for 3-4 min

  5. add broth

  6. cover, cook for 30 min, stirring occasionally

  7. preheat broiler

  8. oil a flameproof 9x13" baking dish

  9. in a small bowl, mix nuts, parmesan, parsley

  10. sprinkle over the top

  11. broil for 3-4 min until golden
