Recipe Ingredients for Broccoli & Pasta Salad with Vinaigrette

1 lb broccoli florets
1/2 lb pasta, short variety
1/4 t lemon zest
2 oz lemon juice
1 clove garlic, minced
1/4 t red pepper flakes
1/4 c extra virgin olive oil
1/4 c chopped kalamata olives
7 fresh basil leaves, chiffonade
1/2 t kosher salt

Recipe Directions for Broccoli & Pasta Salad with Vinaigrette

  1. Blanch broccoli for 2 minutes, scoop out & let cool in colander 20 minutes.

  2. Whisk together lemon zest & juice, salt, garlic & red pepper flakes in a large bowl. Whisk in the oil in a slow, steady stream.

  3. Add 1 T salt to the cooking water, cook pasta to al dente and drain.

  4. Whisk the dressing again to blend. Add all ingredients to bowl and toss to mix thoroughly. Cool to room temperature, adjust the seasonings, and serve.
