Recipe Ingredients for Broccoli-Parmesan Soup

6 green onions
2 cups broccoli
4 celery stalks
3 cloves garlic
3 tbsp olive oil
8 cups vegetable broth
2 cups green beans
3/4 cup elbow macaroni
1 tbsp parsley
8 tbsp parmesan cheese

Recipe Directions for Broccoli-Parmesan Soup

  1. Coarsely chop green onions, celery and garlic. Heat oil in large pot over medium heat. Add onion mixture and pinch of salt. Saute 3 minutes, stirring occasionally. Add broth and bring to a boil

  2. Add broccoli, green beans, macaroni and parsley. Cook 10 minutes over high heat, stirring occasionally.

  3. Puree soup in small batches in food processor, and return to pot. Stir in pepper to taste.

  4. Serve sprinkled with 1 tbsp of grated parmesan.
