This is a very airy version of Quiche. A alteration from the Joy of Cooking cookbook's Quiche Lorraine I add a few and subtract a few things.

Recipe Ingredients for Broccoli Onion Quiche

2 cups flour
3/4 cup shortening
1/2 tsp salt
6 eggs
6 cups broccoli
1/2 cup yellow onion
4 cups low fat milk
1/4 teaspoon white pepper
2 cups mozzarella

Recipe Directions for Broccoli Onion Quiche

  1. Make Crust and refrigerate for 30 minutes

  2. chill shortening

  3. mix flour and salt in mixing bowl

  4. cut shortening into flour mixture and mix until looks like sand with pea sized pieces

  5. add 4-8 tablespoons ice cold water, only enough to make the dough stick together

  6. roll together and divide into two equal balls of dough

  7. Custard filling

  8. scald milk

  9. then mix in eggs, 1/4 teaspoon white pepper

  10. after pie crust is chilled about 30 minutes

  11. get 2 9'' pie pans and spread dough across bottom and up sides

  12. sprinkle cheese and broccoli on the bottom of each pie crust then cover with custard mix

  13. bake 40-60 minutes @ 375 or until golden brown or when a knife is inserted at the side it comes out clean
