Omelette done with broccoli leftovers. Very filling and tasty! :)

Recipe Ingredients for Broccoli Omelette

1 serving Corn Tortillas
2 large Egg, Whole
1/2 cup, chopped Broccoli, Cooked
0.5 tbsp Olive Oil
0.5 oz Cheese

Recipe Directions for Broccoli Omelette

  1. Cut the 2 corn tortillas in squares.

  2. Fry them up a little in the olive oil, in a hot pan.

  3. While they're frying a bit, chop the leftover broccoli (which has been steamed the day before :P) and put it on top of the tortillas, mixing everything, frying everything up a bit. Crack the 2 eggs on top and scramble everything. Season it with salt and pepper, if desired. After it's all cooked, pour it on a plate, pouring the feta cheese on top. Enjoy! P.S. Sometimes I put some Homemade Red Roasted Salsa on it too! Yum~!
