Recipe Ingredients for Broccoli Frittata

1 1/2 cups broccoli, chopped
1 oz cheddar cheese, shredded
4 large eggs, whisked
1 1/2 cups potato, chopped
1 tbsp olive oil
1 tbsp butter
1 clove garlic, minced
2 tbsp onion, finely chopped
1 salt and pepper to taste

Recipe Directions for Broccoli Frittata

Preheat oven to 350. Heat oil and butter in skillet over medium heat. Add chopped onion and potato and cook until the potato is just softened and just starting to brown. Then add broccoli and garlic and cook with lid on, stirring every minute or so, until the broccoli is cooked to your taste and potatoes are nicely browned. Add salt and pepper to taste, then add eggs and let sit until the eggs just start to pull away from the skillet. Put cheese evenly on top and place in oven until the cheese is bubbly and egg is set, maybe 5 minutes.
