My slightly modified version of this recipe; the original uses fettucine, not whole wheat thin spaghetti, 2 cups 1% milk instead of soy milk, no cornstarch or water, and the measurements are: 10 oz chicken breast and 3 cups cooked fettucine.

Recipe Ingredients for Broccoli fettuccine (modified)

0.56 kg chicken, boneless, skinless
2 tbsp butter
4 tbsp parmesan cheese
13 1/4 oz spaghetti, dry, whole wheat
1 c light soymilk
2 tbsp cornstarch
1/4 c water
4 garlic cloves, chopped
2 tbsp flour
1/4 tsp salt
1/4 tsp white pepper
1/4 tsp nutmeg
2 cups broccoli florets, blanched

Recipe Directions for Broccoli fettuccine (modified)

  1. Spray skillet with nonstick cooking spray and cook chicken until no longer pink. Remove from skillet and set aside; keep warm.

  2. In same skillet, melt butter over medium-high heat; add garlic and cook, stirring frequently, until softened, about 1 minute. Continuing to stir, slowly add milk and stir constantly until bubbly. (With my modification, then combine cornstarch and cold water and add to garlic-butter-milk mixture and stir and cook until thickened).

  3. Add cheese, salt, pepper and nutmeg to milk mixture; stir until cheese is melted. Add fettucine (or thin spaghetti), broccoli, and reserved chicken; reduce heat to low and toss until all ingredients are evenly coated with sauce and heated through.
