Recipe Ingredients for Broccoli Cream Soup

4 stalks celery, chopped
1 large onion, chopped
8 cups broccoli, chopped
1 1/2 cups low-sodium chicken broth
2 garlic cloves, chopped
1/2 tsp. pepper
2 tbs. cornstarch
1/4 cup water
1/2 pint low-fat sour cream

Recipe Directions for Broccoli Cream Soup

  1. In large saucepan, saute celery, garlic and onion in a small amount of water (or lightly spray pan with light olive oil or canola oil) until tender. Add the broccoli, broth, and pepper; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until broccoli is tender.

  2. In small bowl combine cornstarch and water until smooth. Stir slowly into soup. Bring to a boil; cook and stir until thickened. Reduce heat to low. Add low-fat or light sour cream. Add more sour cream to achieve personal thickness and taste. Cook until heated through. Yield 6-8 servings.
