Simple, light chowder with carrots and cauliflower and a sprinkling of cheese

Recipe Ingredients for Broccoli Chowder with Cheddar Cheese

1 lb. broccoli, raw
1/2 lb. cauliflower, raw
4 carrots
3 cups Swansons chicken broth (1 1/2 cans)
1 sweet onion, diced
1 tbsp. butter
1 tsp. sea salt
1/4 tsp. black pepper
1 dash Worcestershire sauce
1 c. Half and Half
2 c. shredded cheddar cheese

Recipe Directions for Broccoli Chowder with Cheddar Cheese

  1. Cut up broccoli (including stems), carrots and cauliflower and put into med. size pot with chicken broth, Worcestershire, salt and pepper - bring to a boil, then turn down heat; cover to steam.

  2. In a skillet, saute onions in butter to soften and carmelize. Add onions to pot with other veggies.

  3. When veggies are tender (and broccoli is still a pretty green). Using a slotted spoon, transfer veggies to a food processor to puree'. Put puree'd veggies back into pot.

  4. Add Half & Half and bring just to a boil. Remove from heat and add 1 1/2 c. cheese to chowder.

  5. Sprinkle remaining cheese onto chowder just before serving.
