I am very poor. I had some broccoli stems left over in the fridge and some rice and chicken drumsticks, so I made this. You could always use white meat, but the dark meat chicken is both cheap and tender and this is a great way to stretch a small amount of meat. Leftover rice is always best for fried rice. Feel free to make any additions or substitutions. There are really no rules for what goes in fried rice. Get creative with your leftovers!

  1. Remove bone and skin from chicken. Be sure to remove the pointy pin bone bone, too. Cut into 3/4" pieces. Marinate in a little of the salt, sesame seeds, white pepper, soy sauce, mirin, and rice vinegar.

  2. Dice all the vegetables finely. If you are using broccoli stems, like I did, try peeling the fibrous skin off to improve the texture.

  3. Beat egg and mustard together.

  4. Blend rest of salt, sesame seeds, white pepper, soy sauce, mirin, and rice vinegar with the chili oil.

  5. In a large skillet or wok over medium heat, spray cooking spray and cook egg, stirring constantly so it breaks into lots of small pieces. Remove and set aside.

  6. Spray again and cook chicken. Again, remove and set aside.

  7. Spray again and cook vegetables. When they are almost done spray again generously and add leftover rice. Stir to break up rice and distribute. Stir frequently until rice is hot.

  8. Push rice to outer edges of pan. Pour seasoning mixture in center of pan. Immediately, stir to coat the rice. If it seems a little dry after this point, adding a tbsp or so of water should fix it up.

  9. Turn off heat. Add chicken and egg back into pan. Stir to combine.

  10. Serve & enjoy!
