Recipe Ingredients for Broccoli-Cheese Soup

2 tablespoons butter or olive oil
2 pound broccoli, florets roughly chopped into 1 inch pieces, stems trimmed, peeled and cut into 1/4 inch thick slices
1 cup onion, roughly chopped (1 onion)
2 garlic cloves
1 1/2 teaspoon dry mustard (optional)
1 pinch cayenne pepper
1 Salt
3 cups water
1/4 teaspoon baking soda
2 cups chicken or veggie broth
2 ounces baby spinach (2 cups loosely packed)
3 ounces sharp cheddar cheese, shredded
1 1/2 ounces Parmesan cheese, grated fine, extra for serving

Recipe Directions for Broccoli-Cheese Soup

  1. Heat oil/butter. Add broccoli, onion, garlic, mustard, cayenne, and 1 teaspoon salt. Cook till fragrant, about 6 minutes. Add 1 cup water with baking soda. Simmer, covered cook till broccolli is very soft, 20 minutes or so, stirring once.

  2. Add broth and 2 cups water and increase heat to medium high. When mixture begins to simmer, stir in spinach and cook about 1 minute, till wilted.

  3. Transfer 1/2 the soup to blender, add cheddar and Parmesan and process until smooth. Put processed soup in a bowl, and repeat with remaining soup.

  4. Return to pot, bring to summer. Adjust the consistency of the soup with extra water if needed. Season to taste with salt and pepper.

  5. Serve, passing extra Parmesan separately.
