Original recipe calls for 2 C skim milk & 1/3 cup flour whisked together and stirred into soup, simmered for 3 minutes before adding the rest of the ingredients including 1/2 C fat free half and half. I replaced those three ingredients with 1 can fat free evaporated milk and 1/3 C potato flakes as a thickener. Original recipe states makes 8 servings, 3/4 C each. Nutrition info is based on complete recipe as adjusted.

Recipe Ingredients for Broccoli Cheese Soup

1 tsp canola oil
1 small onion, finely chopped
2 cloves of garlic, minced
2 c low-fat, low-sodium chicken broth
1 lb broccoli florets, chopped (about 4 cups)
1/2 tsp dry mustard
1/4 tsp pepper
1/8 tsp red hot pepper sauce
12 oz fat free evaporated milk
1/3 cup potato flakes
2 oz reduced fat cheddar cheese
2 T shredded Parmesan Cheese

Recipe Directions for Broccoli Cheese Soup

  1. Heat a large saucepan over medium heat. Pour oil into pan and swirl to coat the bottom. Cook onion and garlic for 3-4 minutes, or until onion is tender.

  2. Stir in the broth, broccoli, mustard, and hot pepper sauce. Increase heat to medium high and bring to a simmer. Reduce the heat and simmer, uncovered for 5 minutes or until the broccoli is tender, stirring occasionally.

  3. Use an immersion blender to blend to desired consistency.

  4. Stir in the remaining ingredients (milk, potato flakes and cheeses). Cook over medium los heat for 2 to 3 minutes, or until the cheeses have melted, stirring occasionally.
