I actually used chicken sausage but it didn't recognize it, so I calculated it with regular sausage buy lowered the amount to try and get an accurate cal. count. You can also do spinach and cheese

Recipe Ingredients for Broccoli and cheese Quiche w/potato crust

1 1/2 cups potatoes
1 cup skim milk
1 onion
6 egg whites
2 cups broccoli
5 oz sausage (1 package, 5 links chicken sausage)
5 oz mushrooms
16 oz reduced fat cheddar cheese
1 Salt and pepper to taste

Recipe Directions for Broccoli and cheese Quiche w/potato crust

  1. take sausage out of caseing and crumble in a pan and cook with diced onions. Add broccoli and mushrooms and cook for a few more minutes. You dont' want the veggies to cook all the way, since they will also be cooking in the oven.

  2. Shred the potatoes and press in bottom of a pan with non stick spray to form a crust like bottom. Cook about 20 mins in a 400 oven.

  3. After you take the potatoes out of the oven, sprinkle some cheese over them.

  4. Pour the veggie/sausage mixture over.

  5. Sprinkle the rest of the cheese.

  6. Combine milk with eggwhites and pour over

  7. Reduce oven to 350 and cook about 30 mins
