quiche-like main course dish for a light dinner. Always a crowd pleaser in my house

Recipe Ingredients for Broccoli Cheese Pie

Recipe Directions for Broccoli Cheese Pie

  1. Line a 9x1 inch pie pan with pastry. Pierce with a fork and bake in 450 oven for 8 minutes or till set.

  2. In medium skillet, heat corn oil over medium heat. Add broccoli and onions (I usually steam the broccoli ever so slightly first). Cook 5-6 minutes, stirring frequently, or til tender.

  3. sprinkle 1/2 of cheese over the bottom of the pie shell. Cover with broccoli mixture.

  4. In medium bowl, stir together 3T cornstarch, 1/4 t salt, 1/4 t pepper, 1/4 t oregano, and 1/4 t dried mustard. Gradually stir in milk until smooth. Stir in eggs that have been lightly beaten.

  5. (I usually add a dash of tobasco here)

  6. Pour over the broccoli mixture.

  7. Sprinkle with remaining cheese.

  8. Bake in 350 oven for 30 - 35 minutes or til knife inserted in center comes out clean.

  9. Let stand 10 minutes before serving.

  10. Serve warm. Serves 6-8.
