If you want to give this a fancy name, call it a crustless quiche. For a vegetarian version, simply omit the Canadian bacon.

Recipe Ingredients for Broccoli-Cheese Pie

2 tbsp breadcrumbs
4 eggs
1 1/4 cups 1% milk
1/4 tsp salt
1 pinch of black pepper
1 serving (45 g) wheat bread, crusts removed, cubed
3 cups broccoli florets
2 tsp canola oil
4 oz Canadian bacon, diced
1 onion, chopped
4 oz part-skim mozzarella cheese, grated

Recipe Directions for Broccoli-Cheese Pie

  1. Preheat oven to 350F; and coat a 9? deep-dish pie pan with cooking spray.

  2. Add breadcrumbs, tilting to coat bottom and sides.

  3. Whisk eggs, milk, salt, and pepper in a large bowl.

  4. Add bread and stir to coat, and set aside in the refrigerator.

  5. Steam broccoli until just tender, 3-4 minutes.

  6. Refresh under cold water, drain, and chop coarsely.

  7. Heat oil in a medium nonstick skillet over medium-high heat.

  8. Add bacon and onion; cook, stirring often, until softened and light golden, 3-5 minutes.

  9. Add onion mixture and broccoli to the egg mixture; stir in cheese.

  10. Pour into the prepared pan, spreading evenly.

  11. Bake the pie until light golden and set, 45-50 minutes.

  12. Let cool slightly, cut and serve.
