yummy winter caserole. can substitute as desired - use a different rice or noodle, use a different meat or no meat, add more vegetables ( not acidic)

Recipe Ingredients for broccoli cheese melt

3 cup rice
8 oz Low fat velveeta cheese
3 carrots
8 oz broccoli
1/2 onion
8 oz low fat beef

Recipe Directions for broccoli cheese melt

  1. cook rice and set aside

  2. cook beef and drain

  3. chop velveeta into slices

  4. chop vegetables into bite sizes

  5. dice onions

  6. mix in a casserole dish, layer rice then vegs/meat and top with cheese

  7. put in oven at 325 for 25-30 mins or microwave for 7-9 mins ( add 1/4 cp water)
