A quick and filling soup that is perfect for lunch for one! This recipe can be easily doubled or tripled.

Recipe Ingredients for Broccoli, Cheese and Ham Soup

2 cups low fat chicken broth
1 cup broccoli cut into bite size pieces
1 ounce white cheddar cheese, shredded
0.66 cup skim milk
1 ounce ham
1 tsp corn starch
1/3 cup water

Recipe Directions for Broccoli, Cheese and Ham Soup

  1. In a small saucepan, bring 2 cups of chicken broth to a boil

  2. Add the broccoli and simmer until the pieces are tender, about 10 minutes.

  3. Add the ham, simmer for another 2-3 minutes.

  4. Add half of the cheese, stir until melted and then add the other half, stirring until melted.

  5. Mix the corn starch and water until corn starch is dissolved. Add mixture to the soup, stirring frequently.

  6. Just before serving, add the milk, simmering for a moment to return the dish to temp.

  7. Enjoy!
