Recipe Ingredients for Broccoli Cheese Corn Bread

1/2 cup cornmeal
1/2 cup whole wheat flour
1 tbsp extra virgin olive oil
1 large egg
1/4 cup Egg Sub
126 g cottage cheese
63 g cottage cheese (total of 3/4 cup fat free cottage cheese, breakstone)
1 cup broccoli, chopped
1 tbsp Brummel Brown Spread
2 tsp baking powder
1/2 tsp salt
1 1/5 tsp honey
1/4 cup skim milk

Recipe Directions for Broccoli Cheese Corn Bread

  1. Preheat to 350 degree F, and grease iron cast pan with the 1 tbsp olive oil. Put the pan in once the oven gets hot.

  2. In a large bowl mix together the corn meal, flour, salt, baking powder, and honey together.

  3. In a separate bowl, combine the eggs, cottage cheese, and margarine. Pour into well of flour mixture. Stir until just combined, and then add broccoli.

  4. Bake for about 20 minutes, or until golden brown.
