Not yet tested. Omit celery salt and cook rice with celery seed to lower sodium. Variation: top with cheese and broil uncovered.

Recipe Ingredients for Broccoli Cheese Casserole

1 T butter, unsalted
1 tbsp flour
1 1/2 cups milk, 1%
1/2 cup cream of celery soup, healthy request
1 1/2 cups cheddar, shredded
1 tsp. celery salt
1 pepper
16 oz. broccoli, frozen
1 cup rice, cooked

Recipe Directions for Broccoli Cheese Casserole

  1. Melt butter in sauce pan on medium. Add flour and stir constantly until mixed with butter (no lumps).

  2. Whisk milk and soup together until smooth.

  3. Add milk mixture and bring to a boil. Boil 2 minutes or until thickened.

  4. Remove from heat and cool until sauce is 155degF. Stir in cheese. Add celery salt and pepper.

  5. Transfer to casserole dish. Add broccoli and rice. Heat in oven, covered, until warm.
