Very yummy breakfast. Easy to make and works for South Beach Diet all phases.

Recipe Ingredients for Broccoli Cheese Breakfast Casserole

1 stalk, medium (7-1/2" - 8" long) Broccoli
8 medium Egg, Whole
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 cup Natural Chunk Cheese - 2% Reduced Fat - Sharp Cheddar

Recipe Directions for Broccoli Cheese Breakfast Casserole

  1. Preheat oven to 375.

  2. Boil broccoli in lightly salted water, about 2 minutes. Drain.

  3. Cut spring onion.

  4. Whisk eggs in bowl (may add 1 T milk or half half, depending on your diet), salt and pepper to taste and add half of the cut spring onion.

  5. When broccoli is drained well, use a little oil to coat the casserole dish (I used an 8x8) and put in the broccoli. Spread the rest of the spring onion over broccoli.

  6. Evenly distribute the cheese over broccoli.

  7. Slowly pour the eggs over the cheese (may use to fork to make sure broccoli, cheese and eggs are evenly distributed).

  8. Bake for about 20-25 minutes.
